Nutritional Value:
The leaves are very rich in proteins and vitamins, especially vitamin A and Iron.
Analyses of nutritional value of the Amaranthus species performed by the vegetable and ornamental research institute at Roodeplaat, North of Pretoria (SA)has shown that they are truly exceptional in terms of their food value and are more valueable than all other leafy vegetables.
The protein content is between 26 and 30% so that practically half the recommended daily allowance can be obtained from a single 100gram portion.
The iron content may be as high as five times the recommended daily allowance. The Calcium content at least double and the Vitamin content is more than 20 times the recommended daily allowance.
